Seminar: Chocolate – The journey from bean to bar

On 03/11/2022, the seminar “Chocolate – The journey from bean to bar” organized by the Department of Food Technology – International University (IU – VNU), Ghent University, and Puratos Grand-Place Indochina company was successfully carried out.
At the seminar, Professor Kathy Messens from Ghent University shared about the relationship between cocoa genotype and flavor potential, while Professor Koen Dewettinck talked about the science behind the quality and taste of Belgian chocolates. Their speech was inspiring, knowledgeable, and invaluable.
In addition, Ms. Selene Scotton – Regional Cocoa Manager APAC of Puratos Grand-Place Indochina also provided information on the Cacao Trace sourcing program conducted by the company, which aims at increasing the value of cacao beans and improving the quality of farmers’ life. Especially, Mr. Tran Quang Vinh – an IUFT alumnus, who currently works at PGPI, had a speech about the bean-to-bar chocolate manufacturing process as well.
The seminar came to an end in such an energetic and cheerful atmosphere. IUFT invites you to look at some memorable moments of the events.
